Bottle Gourd/lauki with coconut milk


Bottle Gourd is one veggie that i often cook . This curry is made with coconut milk . so double cooling for the body. The curry is soothing and very light on the tummy. This coconut milk curry is my mom’s recipe and she often makes this . It goes best with some steamed rice with a side vegetable salad or pickle.

Bottle gourd  is one of the popular low-calorie Asian vegetables. Its delicately flavored sections can be a great addition in stews, curries, soups etc.

  • Bottle gourd tender leaves and tendrils are also edible and indeed contain higher concentrations of vitamins and minerals than its fruit.

Bottle Gourd curry

 

Ingredients

Bottle gourd – a small one

Green chillies – 2 Nos

Salt to taste

For tempering

Oil

mustard – 1/2 tsp

shallot 4-5

dried red chilli- 1 big

curry leaves

Method

Remove the skin, inner white portion and seeds from the bottle gourd. Cut it into small bits.

cook this gourd, green chillies, salt with little water and close with lid. Cook on low flame.

When the vegetable is soft, add coconut milk and mix well. Cook for two to three minutes and remove.

In a kadai put the oil and when it is hot add mustard seeds. When it pops up add chopped shallots , red chillies, n curry leaves and pour on mix…Bottle Gourd curry ready!!!
