Chatti pathiri is one of the famous Malabar dish, that has very thin layers of pathiris/ dosas with sweet filling. This dish is made specialy during Iftar time, Pre-and Post wedding events and Special occasions. Also I had bookmarked under “Ramadan Specials”.
It is made in both sweet and savoury variations. The sweet ones are made with sweetened beaten eggs, nuts and raisins, seasoned with cardamom.
The savoury ones are made with traditional meat filling used in making samosas or savoury puffs. The flour is kneaded into soft dough and rolled into thin pancakes/ Sheets. The fillings are added between these layers.

Ingredients (Making 6- pathiris)
For the pathiri Sheets:
3/4 cup flour
1/4 cup warm water or as required
Salt to taste
1 tbsp Oil
Filling
5 Eggs
10 tbsp powdered sugar ( ratio, 1 egg: 2 tbsp sugar/ as required)
1 tsp cardamom powder
1 tbsp Vegetable ghee
Chopped Cashews 1/4 cup
Kismis 1/4 cup
Couscous (White small)- 1/4 cup
Shredded Coconut- 1/4 cup
Coating
6 eggs
6 tbsp powdered sugar ( as required)
1/4 tsp cardamom powder
Method
Making Pathri sheets : 2 Methods
Here you can use any of these methods for making the layers for Chattipathiri ..ie, Make Dosa/ Make Pathiri..
Making Dosa, for this add sufficient water enough to make a smooth dosa batter. Make very thin dosas in a non-stick pan. Also this will give you nice and soft texture.
Otherwise you can make Pathiris
Mix together (flour, warm water, salt & oil). knead (like chappatti) until soft the dough become soft. keep aside.
Meanwhile, We can prepare the filling,
Lightly beat the eggs with sugar and cardamom. Heat a non-stick frying pan. Add ghee and saute chopped cashews, kismis, couscous and grated coconut until they start to change the colour slightly. Add the beaten egg and scramble the whole mixture until the egg is well cooked. Keep aside.
Roll the Pathiris into paper-thin chapathis of uniform size on a floured surface (depending on the size of the vessel in which you are preparing it.. Heat a griddle and cook the pathiris lightly on a tawa. Keep them aside.
Prepare the coating
Mix together eggs, sugar, cardamom powder. keep aside.
You can cook it in non stick saucepan on stove, by placing it in very low flame and then flipping it over carefully and cook on the other side.

Assembling:
Take a non-stick pan, spread couple of oil / ghee all around/spray the nonstick oil) on simmer flame.
Dip the first pathiri in prepared egg coating mixture Keep pathiri as the first layer. Using a spoon sprinkle the scrambled egg filling on top of the pathiri.
On the top dip the second chappathi in the egg coating mixture, coat well and place it on top of the filling.
Sprinkle the scrambled egg mixture again and repeat this until all the pathiris and the scrambled egg mixture is used up and pathiri being the top layer.
Pour 1/2 of the remaining egg coating mixture on top of pathiri so that it drains on all the gaps on sides and form a thin layer on top ( to keep the Chatti Pathiri moist) and close the pan with a lid . After 10 minute, open the lid and pour the remaining 1/2 of egg coating mixture over the half cooked chattipathiris. Cook for 30 minutes and then flipping it over carefully and again cook on the other side for 10 more minutes. Turn off and open.
Sweet Chatti Pathiri” is ready!!!!!
Garnish with some jeweled cashews, kismis and shredded coconuts. Cut into desired shape and serve hot!!!

For making 6 pathiris
5 Eggs (filling) : 6 Eggs (coating)
