Orange cup cake

 

Ingredients:

1 cup All purpose flour

1 cup Castor sugar

3 large eggs

1 tsp baking powder

1/4 tsp baking soda

orange zest ( 1 large orange)

1/3 cup orange juice

1/3 cup canola oil ( any veg.oil)

1/2 cup dried cranberries (according to your taste)

 

Method:

1. Preheat oven to 350 degrees, line a 12 piece cupcake tin with liners and set aside. .

2. Sieve the dry ingredients (flour, baking powder, baking soda) 3 times.

3. In a large bowl, beat eggs n sugar well until it doubles.

4. To this egg mixture add sifted flour little by little (gently fold).To this add orange zest, juice, canola oil, dried cranberries..

5. Using a large ice cream scoop, divide your batter evenly in lined muffin tin.

Bake for about 20 to 22 minutes or until a toothpick inserted in the center of a cupcake comes out clean. Let them cool completely on a wire rack.
