Quick, Easy and Delicious 😛
The pudding also makes a great breakfast. Make it less sweet and Nuts and dried fruits are toasted and added to the pudding and used for garnish.
Ingredients
Semiya/Vermicelli – 1/2 cup broken
Thick coconut milk – 2 cups or Extra if needed
Chopped Big banana/ nendra – 1 small
Sugar 2 tbsp or as required
pinch of Salt
1 crushed cardamom
Shallots chopped-2
Cashews & kismis- few
Vegetable Ghee/ Margarine- 1 tbsp
Method
Heat ghee in a pan over medium heat. When hot, saute chopped shallots until light gloden colour (Don’t burn), add cashews and cook until lightly golden on some edges (1 to 2 minutes) . Add raisins and cook until they puff up. (Now remove few golden shallots, cashews, kismis to garnish the pudding). To this slowly pour coconut milk along with broken Semiya, cook until slightly soft . Now add chopped banana, cook until it becomes soft. Then add sugar, salt, and 1 crushed cardamom. If the pudding too thick, at this point you can add the remaining milk .Turn off . Garnish with the remaining shallots, cashews, kismis and Serve hot.
