Dates & Nuts Balls in 15 minutes. 🙂
These Crunchy Dates Balls are so easy to make that I almost make these twice a week in small quantities to pack in my kids’ snack box for their school. For my kids they are like candy and they loved it.
Ingredients
Dates pitted, cut into cubes- 20 large/ small pack
Arrow root biscuits/ Less sugared biscuits – 15
Ghee/ butter- 2 tbsp
Nuts ( chopped cashews, almonds, pistachios, kismis) – 1/4 cup
Cardamom powder- 1 tsp
Method
Powder 15 biscuits with cardamom powder in a blender. keep it aside.
Dry roast nuts for few minutes if on stove top, set them aside to cool/ Add them to a microwave safe tray and microwave for about 2 minutes, stir in between at least twice.
If you are not using pitted dates, you will have to remove the seeds. The dates available here turn quite soft when warmed up and don’t need to be blended in a jar. So I mashed/knead them, it just takes 2 to 3 minutes.
To the same pan, add dates and heat them till turn soft. If in a microwave, add dates to the same tray, microwave for about 30 to 60 seconds to soften them. Now reduce the heat. To this add roasted nuts, mix well, then add powdered biscuit mix ( from this biscuit mix 1 tbsp mix for rolling) . mix well and turn off the stove. let it cool. After take small portions of the date mix and roll them to balls.
You can roll them in biscuit cardamom mix to give a special look. 🙂
You can try using dessicated coconuts, sesame seeds, peanuts, pumpkin seeds or Choco chips
